It looks like Chipotle might be the next restaurant chain to set up shop in East Ellijay.
The fast Mexican grill dining chain has expressed interest in the former Krystal location at 124 Highland Crossing, confirmed Larry Callahan, of the East Ellijay Planning and Zoning office.
Construction documents note that a complete gutting and redesign of the building, which has been vacant since last year, is planned.
“They have turned in their plans for preliminary approval, but they’ve not picked up a building permit,” said Callahan. “It is cooking, but it’s just not quite there yet. I feel like they are going to do it based on what they’ve said.”
In other East Ellijay new business updates, a Waffle House near the Marriott Springhill Suites Hotel is nearing completion, as is the new Wayside Animal Hospital on Highland Crossing, and discount clothing retailer Marshalls has started renovating space in the Old Orchard Square shopping center.
Callahan also said East Ellijay has hired a contractor to replace a section of aging storm drain on Highland Crossing. When that will happen has not been determined.
“They’re going to work at night so I don’t think there will be a lot of traffic interference,” he added.
